Deconstructed Garden Pesto "Pasta"


What a week! I truly believe that I have had the most productive days of my life recently, and it is all paying off. My upcoming cookbook Bowls of Love is FINALLY coming together! It has been months and months (and months) of some serious hard work, and I am overflowing with excitement as I see it becoming a reality. Thanks to the hard work and brilliant creativity of my incredible designer Margot, the book looks so professional, colorful, and just my style. I released a sneak peak of the cover on Monday, and the response has been incredible. In the midst of all of the craziness, I wanted to make a simple yet perfect summer dinner tonight. I was eating alone because Ry had to work late, so I made some zucchini noodles and threw in a tomato and some basil from our balcony garden. It tasted AMAZING, and while the picture wasn't perfect, I decided I should share it with all of you! Go pick some tomatoes and give it a try! 

Deconstructed Garden Pesto "Pasta": Serves 1, Prep time: 5 min, Cook time:  10-15 minutes

Ingredients:
- 1 small zucchini, peeled into "noodles"
- 1 tsp. olive oil
- 2 cloves garlic, chopped
- 1 medium tomato, chopped
- 1 Tbsp. pine nuts
- 5-10 small basil leaves
- salt and pepper to taste

Instructions:
1. Heat the oil over medium heat
2. Add the garlic and saute for 5 minutes until fragrant
3. Add the zucchini noodles, and cook for 3-5 minutes until soft
4. Add the tomato, pine nuts, and basil, and cook another 2-5 minutes until well combined
5. Season with salt and pepper to taste

Roasted Ithaca Tomato Soup w/ Fresh Basil Pesto

Life is good... Really good... Beyond amazing actually! Need some reasons?

1. I have a complete draft of my cookbook Bowls of Love: Paleo Soups for the Seasons! All 50 recipes have been photographed by the wonderful Erica Gannett, and the stories have been drafted and are getting refined by my editor (famous author) A.J. Walkley :) I am still pushing for a publish date in October so the book will be ready for all of you just in time for the Fall and cool nights that will be perfect for bowls of soup.
2. Mal and I have been separated for over three years, and our official reunion is TOMORROW! She is finished with business school, and her two-month travel adventures in Asia are coming to a close. She is moving back to Stamford, living in my building, and making my dreams come true!
3. RYAN AND I GOT ENGAGED!!! There are no words to fully describe how this makes me feel, so just know that I am so (sooo) excited, grateful, and in love with the turns my life has taken. Everything truly has happened for a reason, and there is no better time than today to reflect on that and appreciate every moment that brought us here.

I am also thrilled to announce that I won Groundswell International's basil recipe contest which was an incredible way to reconnect with an old sorority sister AND have the chance to work with the wonderfully talented Emma Frisch of Frisch Kitchen. She was by far my favorite contestant on the Next Food Network Star, and I was overjoyed to win a guest post on her blog. Check out my guest post here.

The winning recipe is for my Roasted Ithaca Tomato Soup with Fresh Basil Pesto. It is one of the 50 recipes from my upcoming cookbook, and I am bursting at the seams with excitement for the book to be done. You will have to wait a couple more months for the rest of the recipes, but in the meantime, enjoy this beautiful teaser with photo cred to the talented Erica Gannett!

Roasted Ithaca Tomato Soup w/ Fresh Basil Pesto: Serves 4-6, Prep time: 15 min, Cook time: 90 minutes

Ingredients:
Soup:
- 3 pounds roma tomatoes (or any other tomatoes in your garden!)
- 3 Tbsp. olive oil
- sea salt & pepper
- 1 sweet onion, chopped
- 1 shallot, chopped
- 1 heaping Tbsp. chopped garlic
- 1/2 cup packed fresh basil (about 20 leaves)
- 15 oz. can diced tomatoes (organic & no salt added)
- 4 cups vegetable stock

Pesto:
- 4 oz. fresh basil
2-3 Tbsp. olive oil
- 2 tsp. crushed garlic
- 1/4 cup pine nuts
- fine sea salt and pepper to taste

Instructions:

Pesto:
1. Add the basil to a food processor
2. Pulse until basil breaks down, and then add all other ingredients
3. Blend until smooth (you may need to scrape the edges down a few times)
4. Add additional olive oil or pine nuts if you like your pesto thinner or thicker

Soup:
1. Preheat oven to 400 degrees
2. Slice the tomatoes length-wise, and arrange them on a foil-lined baking sheet
3. Drizzle 1 Tbsp. of olive oil over the tomatoes, and season with sea salt and pepper
4. Roast tomatoes for 45 minutes
5. In a large soup pot, heat the other 2 Tbsp. of olive oil over medium heat, and add the onion, shallot, and garlic. Cook for 5-10 minutes until tender
6. Add the can of tomatoes, fresh basil, and broth
7. Stir in the roasted tomatoes
8. Cook for 45 minutes uncovered over medium-low heat
9. Puree the soup with your immersion blender until smooth. 
10. Top with drizzled pesto and enjoy the taste of your fresh summer garden!

Italian Salmon Pockets

I am approaching the 72-hour mark for my kickstarter campaign for Bowls of Love, and it is exhilarating! I am shamelessly plugging the cookbook everywhere I can, and I hope you all have had a chance to watch my video and check out some of the pictures from the book. I have connected with incredible people all over the world, each with a unique story why the project touches them. This experience has opened my eyes in so many ways, and the entrepreneur in me is quite happy.

Tonight's recipe was inspired by Giada's and was originally suggested to me by Mal. We went up to Ithaca this weekend for Mal and Mike's MBA graduation at Cornell, and it was incredible. Tons of great times, big laughs, and happy tears all around. More than anything, it made me really realize that Mal is on her way back to Stamford! There will be a few countries/trips in the meantime, but soon enough we will be neighbors sharing recipes (and memories) together just like the good old days.

This recipe is incredibly flavorful and a nice change from my go-to salmon recipe (post to come!). The salmon has a lot of juice from the tomato mixture, so it would be perfect served over zucchini noodles or your favorite gluten free pasta!

Italian Salmon Pockets: Serves 4, Prep time: 10 min, Cook time: 25 min

Ingredients:
- 4 salmon fillets (6 oz. each)
- 2 Tbsp. olive oil, divided
- 1 pint cherry tomatoes, chopped
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1/2 lemon
- 1 Tbsp. chopped basil
- Salt & pepper

Instructions:
1. Preheat the oven to 400 degrees
2. Drizzle 1 Tbsp. olive oil on salmon fillets, and season lightly with salt and pepper
3. Mix the tomatoes, onion, garlic, lemon, basil, and 1 Tbsp. of olive oil in a bowl
4. Lay out 4 large pieces of foil on the counter
5. Put each salmon fillet (oil side down) on the foil, and top with 1/4 of the tomato mixture
6. Fold the foil packets closed, and twist the ends tightly (they should be sealed)
7. Bake for 25 minutes, and then serve immediately

Parsnip Soup w/ Spiced Pumpkin Seeds

Great news, followers! My blog is not dead. It was simply hibernating for a bit while I figured out some pretty monumental life decisions. I wasn't feeling as creative with my cooking (and time was limited), so I remade a ton of my old recipes to make things quicker and easier. In the midst of the craziness, I quit my job at McLagan and accepted a new position at PepsiCo! It is going to be a huge change, and I am thrilled to start this next chapter. I have this week off before I start to get things organized, so I am hoping to share some great new recipes with all of you.

I was feeling very jealous of Grace and my other Boston friends who visited the Sunday SOWA market today because the farmers market here in Stamford just doesn't even compare. I go and support them every week, but I am pretty convinced that a lot of the fruits and veggies are not local. There wasn't a parsnip to be found yesterday, so I went to the grocery store to pick some up so I could experiment with a new soup. I try to make a new soup every (or every other) week in the Fall/Winter to have ready-made meals handy. This recipe is incredibly flavorful with amazing fall tastes, and the spiced pumpkin seeds add the perfect crunch.

Parsnip Soup w/ Spiced Pumpkin Seeds: Serves 4-5, Prep time: 20 min, Cook time: 75 min

Ingredients:
- 1 Tbsp. olive oil
- 1 large sweet onion, chopped,
- 6 cloves garlic, chopped
- 1 bunch green onions/scallions, chopped
- 1 bunch celery, chopped
- 1 XL carrot, peeled & chopped
- 3 XL parsnips, peeled & chopped
- 4 cups organic chicken or veggie stock (no sugar added!)
- salt and pepper to taste
- 1/2 cup raw organic pumpkin seeds
- 1 tsp. olive oil
- 1/2 tsp. cinnamon
- 1/2 tsp. paprika
- 1/2 tsp. cumin

Instructions:
1. Heat 1 Tbsp. olive oil over medium heat
2. Add onion, garlic, and scallions and saute about 10 minutes until fragrant
3. Add celery, carrots, and parsnips. Stir well to combine and cook another 5 minutes
4. Add stock and bring to a boil
5. Cover and reduce heat. Cook for 1 hour
6. Meanwhile, heat 1tsp. olive oil in a small pan over medium heat
7. Add pumpkin seeds and toss to combine
8. After 1-2 minutes, add cinnamon, paprika, and cumin
9. Cook for another 2-3 minutes until fragrant and then let cool
10. When soup is done, let cool slightly and blend with immersion blender or food processor
11. Season with salt and pepper to taste (I just added some pepper)
12. Serve piping hot with ~1Tbsp. of spiced pumpkin seeds on top! Happy Fall :)

Vermont Balsamic Maple Turkey Meatloaf

Well hello there. Today was a big day with my blog hitting over 100,000 hits and my health coaching certificate and card coming in the mail. I am now officially a board certified health coach, and I am thrilled! It has been an interesting journey of self-reflection throughout my studies, and my life is completely different (in so many wonderful ways) than when I started. 

I have been a bit MIA from blogging over the past few weeks with some major things going on. Luckily in the midst of the craziness Ry came home from Dubai and we had an amazing getaway in Vermont. We celebrated Heather and Kenny's wedding and had tons of adventures along the way. I wanted a souvenir from the trip, and I ended up with some special Vermont-made food products to experiment with. One of the treasures was maple flakes which basically looks like brown rice krispies. The only ingredient is dried maple syrup, and they are crispy and sweet. I figured I could sprinkle a few of them on tonight's recipe instead of covering my meatloaf with the more traditional sugary ketchup concoction. It was just a hint of sweet mixed with the tangy balsamic, and it came out great. Enjoy!

Vermont Balsamic Maple Turkey Meatloaf: Serves 4-5, Prep time: 20 min, Cook time: 40 min

Ingredients:
- 1.25lbs ground turkey
- 1 egg
- 1/4 cup almond flour
- 1 Tbsp. olive oil
- 1/2 sweet onion, chopped
- 3 medium carrots, peeled & chopped
- 3 stalks celery, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1+ tsp. garlic powder
- 1/2 tsp. basil
- 1/2 tsp. thyme
- 1 Tbsp. balsamic vinegar
- 2 Tbsp. Vermont maple flakes

Instructions:
1. Preheat oven to 375 degrees
2. Heat olive oil over medium heat
3. Add onions and cook for 5 minutes until soft
4. Add carrots, celery, salt, pepper, garlic powder (more is better!), basil, and thyme and cook for another 10-15 minutes until soft
5. Mix turkey, egg, almond flour, and veggie mixture in a bowl
6. Form into a loaf on a foil-lined pan
7. Brush with balsamic vinegar
8. Sprinkle meatloaf with Vermont maple flakes (if you don't have these you can use a mixture of balsamic and maple syrup for the topping)
9. Bake for 20 minutes
10. Brush the meatloaf with the leftover balsamic
11. Bake another 15 until cooked through (no pink in the turkey)
12. Cover the meatloaf and let sit for 5-10 minutes before serving

Butternut Squash Soup

There are pros and cons to every situation including being in a long-distance relationship. While certainly more cons than pros if you ask me, the one good thing is that I am able to continue my absurd love affair with garlic. I used to prefer food very bland without salt, pepper, garlic, or any herbs or spices. These days, my taste buds have adapted, and I can barely eat anything without garlic. I found some organic elephant garlic at the store recently, so I knew I had to try it. As you can see, three of the cloves took up my whole hand, but I still used the entire head. Sauteed sweet onions with loads of garlic makes the perfect base to almost any soup or meal, so you know this is going to be a good one. Aside from the wonderful taste, garlic has antiviral, antibacterial, anti-inflammatory, and anti-cancer properties. These are more than enough reasons for me to eat garlic every day! 

Tonight's recipe was inspired by my Aunt Lauri's butternut squash soup. I took out the milk and tweaked it a bit. If you prefer a thicker/creamier soup, you can mix in 1 cup of coconut milk after blending the soup. This soup is perfect for the fall, but you can't go wrong any time of year with this recipe!

Butternut Squash Soup: Serves: 8-12, Prep time: 20 min, Cook time: 1 hour

Ingredients:
- 6lbs. butternut squash, peeled & chopped
- 2-3 Tbsp. coconut oil
- 3-5 small vidalia onions, chopped
- 1 head elephant garlic, peeled & chopped
- 8 cups organic chicken stock
- salt & pepper to taste

Instructions:
1. Heat coconut oil over medium heat
2. Add onions and garlic and cook for 10-15 minutes until soft and fragrant
3. Add squash and broth to the pot, and bring to a boil
4. Lower heat to low, and cook 45-60 minutes until squash is soft
5. Puree with immersion blender or transfer in batches to a blender or food processor
6. Eat up!

CPG Soup

WHAT a day! I decided my team at work deserved a little home-cooked goodness to kick off our busy season and have a little team bonding. After about ten back-to-back meetings, I left work early, went to the grocery store, and cooked for 2.5 hours straight. I went with a belated Cinco de Mayo theme and made fajitas, guacamole, mango salsa, Mexican stuffed mushrooms, and spiced cantaloupe. We had a great time, and I just finished over an hour of cleaning dishes. Luckily I prepped all my blogposts over the weekend after my insane cooking spree, so I have a great soup to share tonight. The "CPG" stands for carrots, peppers, and greens (not that creative, sorry). I had a ton of leftover veggies (still perfecting meal planning and my new routine), so I figured I would make some soup. Ironically, as I was cooking the carrots, my mom sent me this picture of her with her Kentucky Derby hat with carrots attached to the top. Leave it to the girl from the Bronx to make the most creative (ridiculous) Derby hat. While she didn't win the hat contest she entered, the woman who did win didn't actually make her hat (she borrowed one from a friend!). In my mind, that makes my mom the winner. I am proud to say that I have learned a lot from my mom over the years - everything from my passion of cooking to a love of crazy costumes!

CPG Soup: Serves: 4-5, Prep time: 20 min, Cook time: 50 min

Ingredients:
- 1 Tbsp. coconut oil
- 1 large sweet onion, chopped- 10-12 cloves of garlic, chopped (one large head)- 1 pound baby carrots- 3 sweet peppers, chopped (I used 1 red, 1 yellow, & 1 orange)
- 1 bunch organic rainbow chard, chopped

- 2 quarts organic vegetable broth (I used Pacific)
- 1 bunch organic beet greens, chopped

Instructions:
1. Heat coconut oil over medium heat
2. Add onion and garlic, and cook for 10 minutes until lightly golden brown
3. Add carrots and peppers and cook for another 5 minutes, stirring frequently
4. Add vegetable stock and bring to a boil
5. Cover pot and reduce heat to a simmer for 30 minutes
6. Add greens and cook another 5 minutes
7. Remove pot from heat and blend with an immersion blender (or food processor/blender)
8. Serve immediately or let cool and serve later - tastes best after it has a chance to sit for a few hours or overnight in the fridge!

Ginger Chicken

I cooked my heart out this weekend, and then I cooked some more. It took a little time to get back in the swing of things, but I am officially back in action. I have a ton of recipes to share over the next week thanks to all of my hard work, and I am starting off with a delicious ginger chicken concoction that my little brother Brandon and I dreamt up. He came to visit on Sunday to check out my new place and hang out, and we cooked a feast. We went to Fairway to pick out ingredients, and the pharmacist/homeopathic-lover was chatting with us and thought Brandon was my son! Apparently I am not aging as gracefully as I may have thought. Brandon taught him an important lesson that you should always assume the woman is the older sister, because you can never go wrong. I couldn't agree more, so hopefully we taught this guy a thing or two. I was thrilled to have Brandon's company, and he was a fantastic sous chef. He taught me a lot about foreign policy, new technologies, and life as a high school student in 2013. Hopefully with his new cooking skills and recipe ideas he will be even more of a lady killer than he is already! By the way, we decided to name this chicken "ginger chicken" for a reason. Do not try it unless you love ginger! Don't say we didn't warn you...

Ginger Chicken: Serves: 4, Prep time: 20 min, Cook time: 75 min

Ingredients:
- 4 organic, free-range chicken thighs (about 1.5 lbs. total)
- 1 large sweet onion, sliced
- 1 medium butternut squash, peeled & cubed
- 1 Tbsp olive oil
- 1 inch piece of fresh ginger, peeled & chopped
- 6-8 large cloves of garlic, peeled & chopped
- 1/4 cup fresh mint, finely chopped
- sea salt and pepper

Instructions:
1. Preheat oven to 350 degrees
2. Bake cubed squash in a little water for 30 minutes until soft, and then drain the water
3. Season chicken thighs with salt and pepper, and add them to the pan with the squash
4. Add the onion, ginger, and garlic, and drizzle with olive oil
5. Stir to mix, and then add the mint and some more salt and pepper
6. Bake for 45 minutes until chicken is cooked through

Fiesta Chicken Bowl

I have spent the last couple of days with a heavy heart thinking about the tragedy that happened in Boston on Monday. I flew to Minneapolis around noon on Monday and landed just after 3pm. I had dozens of texts and messages when I landed, and I quickly learned what happened. I am beyond thankful that everyone I know was OK, but I can't stop thinking about all those who were heavily affected both physically and mentally. My thoughts and prayers are with everyone involved, and I can only hope that nothing like this will ever happen again.

Amidst all of the tragedy, it has been inspirational watching the city come together even from afar. I have mixed emotions for my travel home on Friday with only 4 more days in Boston before I move. In my last few days, I plan on seeing as many friends as possible, feeding people delicious food cooked from my heart, and soaking up all of the positive experiences and energy that Boston gave me throughout the two-year roller coaster. As you reflect on the events from this week, all I can say is to grab your loved ones, make a beautiful meal, and appreciate the little things in life because life and love are as precious as anything.

Fiesta Chicken Bowl: Serves 2, Prep time: 5 min, Cook time: 15 min

Ingredients:- 1 Tbsp. olive oil or coconut oil
- 1 medium sweet onion, sliced
- 6 cloves garlic, sliced
- 1 cup sweet bell peppers, chopped
- 8 oz. poached chicken, chopped or shredded
- Fine sea salt & pepper to taste
- 1/2 avocado, sliced

Instructions:
1. Heat oil over medium heat
2. Add onions and garlic and cook until lightly browned, turning often (about 10 minutes)
3. Add peppers and chicken (chicken should be pre-cooked) and cook for another 5 minuntes
4. Add salt and pepper to taste, and then top with avocado slices

Sweet & Savory Moroccan Chicken


Who likes moving? Most people assume that I love to move given the fact that I am about to move into my EIGHTH home in 6 years, but that couldn't be further from the truth. While I love to be out and about and travel, I truly am a homebody, and I appreciate a good sense of stability and home more than anyone. I'm hoping that move #8 is a lucky one, because it has been a rocky road for sure! Today was quite a day, and my apartment is upside-down. I met a few interesting characters from Craigslist, and I successfully sold the majority of my furniture. Now I just need to get through 5 whirlwind days of travel for work, and I will officially be in the home stretch. My blog will be a bit neglected over the next week or two, but I am almost up to my 100th recipe, so you should have plenty to keep you busy in the meantime.

Tonight's recipe is thanks to a trifecta of inspiration: a chicken tagine dish that my friend Kat made to one of our ladies' night potlucks, all of the amazing spices in the food in Dubai, and my new favorite restaurant in Naples called  Bha! Bha! Persian Bistro that I tried with mom and Ron. My entire apartment smelled heavenly while this cooked, and it couldn't be any easier. You will love this dish! 

Sweet & Savory Moroccan Chicken: Serves 8, Prep time: 15 min, Cook time: 40 min

Ingredients:
- 2 lbs. boneless, skinless organic chicken thighs
- 1 sweet onion, sliced
- 8 cloves garlic, peeled & sliced
- 1 Tbsp. olive oil
- 2 tsp. ground cumin
- 1 tsp. cinnamon
- 1 tsp. turmeric
- 1/2 tsp. fine sea salt
- 1/2 tsp. pepper
- 8 oz. dried apricots
- 8 oz. dried plums / prunes (get pitted!)

Instructions:
1. Preheat oven to 375 degrees
2. Rinse chicken, pat dry, and arrange in 2 pans
3. Add sliced onion and garlic
4. Drizzle the olive oil on top and mix to combine
5. Add all spices
6. Top with apricots and plums
7. Bake uncovered for 40 minutes or until chicken is cooked through with no pink

Garlic Chicken Vegetable Soup

I am sorry to admit that I have been neglecting my blog! With the upcoming move, craziness at work, and loads of travel, I am a bit behind on sharing my recipes. Before I fully shift into Spring gear, I need to share a few leftover recipes that I have enjoyed over the past few weeks. Soup has been a regular part of my weekly routine for the past few months, and this great take on chicken soup was a perfect breakfast (yes, breakfast) a couple of weeks ago. I sadly missed the farmers market due to travel, so I stopped into Foodies, grabbed every veggie that looked good, and threw them together to make soup. As I prepare for life back in the office, I am going to be doing a lot of meal planning and cooking ahead like this!

On another note, I am thrilled to announce that I am officially pre-certified as a health coach and can start seeing clients. I am really looking forward to working with people on adding balance and happiness to their lives by adopting healthy and holistic lifestyles. Garlic Chicken Vegetable Soup: Serves 8, Prep time: 20 min, Cook time: 70 min

Ingredients:
- 1-2 Tbsp. olive oil
- 2 large sweet onions, chopped
- 1 leek, sliced
- 1 head of garlic, diced
- 1 bag baby carrots, chopped
- 1 bag celery hearts, chopped
- 2 turnips, peeled & chopped
- 16 oz. mushrooms, chopped
- 2 lbs. chicken breast
- 2 quarts organic, no-sugar-added vegetable or chicken broth/stock
- 1 large bunch of kale, stems removed & chopped
- salt and pepper to taste

Instructions:
1. Heat olive oil over medium heat
2. Add onions, leek,and garlic and cook for 10 minutes until soft
3. Add carrots, celery, turnips, and mushrooms and cook for another 10 minutes
4. Lay raw chicken breasts on top of the veggies, and then add the broth/stock
5. Bring the pot to a boil, then cover the pot and let simmer on low for 45 minutes
6. Add the kale and let cook on low for another 5 minutes
7. Season with salt and pepper to taste and serve!

Turkey & Veggie Mash Bowls

There are 22 days until the big move, and I have about 5,000 things to do in the meantime! Most important of all will be celebrating the birthdays of my mom and Mal down in Florida. I can't think of a better weekend plan than being down in Naples with my two favorite ladies (and Rosey) for some quality workouts, pool time, farmers markets, dinners out, and nonstop chatting/hugging. It doesn't get much better than that in my book.

I have to share something very gross with you. I was on Amtrak this afternoon heading back to Boston after a meeting in Providence, and the guy in front of me was scratching his head. He must have had a cut or bump or something, because he picked at it, and then ATE it! I should've apologized in advance for this story, but it just boggled my mind. He was a successful-looking businessman in his 40s, and he straight up ate his head scab. In hindsight, this probably isn't the best story for a food blog, but I really had no choice but to share it :)

Switching gears (hopefully you can build your hunger back), tonight's recipe is a turkey and veggie mash bowl. I had made something similar with sweet potatoes on the bottom, so I figured I would switch it up and try the carrots. I have to admit that I prefer the sweet potato version, but this was still great. I actually ate this for breakfast for a full work week which was perfect because I made it all in advance. If you aren't into a savory breakfast, try it out for lunch or dinner!

Turkey & Veggie Mash Bowls: Serves 5, Prep time: 10 min, Cook time: 25-30 min

Ingredients:
- 6 large carrots, peeled and roughly chopped 
- 1 Tbsp. olive oil

- 1 large onion, diced
- 1 Tbsp. garlic, chopped

- 2 large green peppers, chopped
- 2 heads of broccoli, chopped
- 1lb. mushrooms, chopped
- 1 lb. organic ground turkey
- Fine sea salt and pepper

Instructions:
1. Boil a pot of water. When boiling, add carrots and boil for 20 minutes or until soft
2. Meanwhile, heat olive oil over medium heat 
3. Add onions and garlic and cook 5-10 minutes until soft. 
4. Add ground turkey and cook about 10+ minutes until cooked through (no more pink)
5. Add peppers, broccoli, and mushrooms, and cook another 5-10 minutes until everything is cooked
6. Season with salt and pepper to taste
7. Drain the carrots, return them to the pot and mash with a potato masher
8. Split the carrot mash among 5 containers/bowls, and then evenly distribute the turkey/veggie mixture on top.

Spring Sea Bass Ceviche

Lots of updates from blog central! Since my last post, I have decided I am moving out of Boston and subsequently got my apartment rented, found a new one, worked in Stamford, went to a baby shower, and celebrated Passter/Eastover with the fam. It has been a wonderful and crazy week, and now the countdown for the big move is on. I am so excited for my next chapter, and I am looking forward to sharing my new adventures (and recipes) that I have along the way. 

Tonight's recipe is a beautiful spring sea bass ceviche that Ryan and I made in Dubai during a cooking class at the Taste of Dubai. It was an amazing food festival with all of the top restaurants and shops, famous international chefs, cooking demonstrations, classes, live music, and more. We had a great time, and we learned how to make our first ever ceviche. It is the simplest dish imaginable, and it is perfect for the warmer spring and summer days ahead! This recipe passes my test for freshness, color, texture, and taste. The recipe was a small one for two tasting plates, so feel free to double (or triple) the recipe if you are making it for a bigger group. Be amazed as the fish naturally "cooks" on its own when mixed with the lemon juice!

Spring Sea Bass Ceviche: Serves 2, Prep time: 5-15 min, Cook time: none!

Ingredients:
- 5 oz. sea bass fillet
- 1/4 cup chopped avocado
- 1/3 cup chopped hearts of palm
- 1/2 cup chopped papaya
- 1/4 cup sliced radish
- 1/4 cup diced red onion
- 1/3 cup chopped tomatoes
- 1 small chopped jalapeno
- 1 Tbsp finely diced garlic
- Juice from one lemon
- Sea salt & pepper

Instructions:
1. Slice the skin off the sea bass, and cut it into bite-sized pieces
2. Lightly season with salt and pepper, and squeeze lemon juice over the fish
3. Stir the fish so it is coated well, and let sit for about 5 minutes
4. Add all other ingredients, mix well, and serve!
